Total time: 1 hour 15 minutes

Zucchini lasagna another delicious way to cook the vegetable especially in summer when zucchini are abundant and cheap.


Ingredients for 4 people:

  • 3 zucchini
  • 3 cups Bechamel
  • 4 ounces ham chopped
  • 3/4 cup grated parmesan
  • salt and pepper



Slice zucchini lengthwise. Fry or grill them briefly, so still firm. Pat them dry from oil and salt them.

Using a square 9 inch pan or similar, grease bottom with butter. Lay on top zucchini, then a thin layer of bechamel, spread ham and sprinkle parmesan.

Repeat for next two layers, dressing the top with more abundant ingredients.

Bake at 350F for about 40 minutes. Let rest 15 minutes before serving.


Note: you could marinate zucchini ahead with oil and thyme, garlic, onion or similar. You could skip ham for a complete vegetarian dish and substitute with a marinara sauce.
