Vodka sauce is a recipe obtained by adding vodka to a simple tomato sauce and refining it with cream.

So you could pick a tomato sauce of your liking, but completely vegetarian. Vodka is an odorless, colorless and tasteless spirit (a few are also flavored) and won’t alter the sauce except for a certain something… Penne are the signature pasta, but whatever you like.

 

Ingredients for 4 people:

  • 3 tablespoons olive oil
  • 1/2 onion chopped
  • 2 garlic cloves chopped
  • 1 stalk of celery chopped
  • 1 carrot chopped
  • 4 ounces vodka
  • 6 San Marzano tomatoes or can chopped
  • 1 teaspoon oregano
  • 10 basil leaves torn by hand
  • 1 cup cream
  • salt and pepper

 

Directions:

Put oil in a saucepan and cook onion and garlic about 3 minutes.

Add celery and carrot and go on for another 5 minutes. Add vodka and let evaporate for about 2 minutes. Then add tomatoes, oregano, salt and pepper. After reaching boiling point, simmer for about 10 minutes. Stir in cream, basil and heat for a few seconds, then turn heat off.

* Mix parmesan with pasta

 

Note:  You could add some hot pepper flakes.
