Tagliatelle with Prosciutto and Asparagus a simple quick and tasty recipe. A combination with a good balance of ingredients.

 

Ingredients for 4 people:

  • 3/4 pound tagliatelle
  • 1 tablespoons olive oil
  • 1 clove garlic
  • 3 ounces prosciutto
  • 3/4 pound asparagus cut in 2 inches pieces
  • 1/2 teaspoon thyme
  • 1/2 cup white wine
  • 3/4 cup cream
  • 1/2 cup grated parmigiano
  • Salt and pepper

 

Directions:

In a large pan, on low heat put oil and garlic to color, then remove.

Then stir in prosciutto, thyme and cook about 2 minutes. Add wine. Let evaporate, 2-3 minutes.

Toss asparagus into pot with pasta 3 minutes before draining.

Add cream, parmesan and pepper to the pan with prosciutto. Stir and heat, then add tagliatelle with asparagus. Check if salt needed.

Mix well adding water reserved from pasta if necessary. Turn off heat and serve.

 

Note: cooking time is for medium size asparagus. They should be cooked firm. Use the top part. Salt probably not needed as prosciutto is salty and it’s in pasta water. Add more considering asparagus too.
