tagliatelle ham and cream

Tagliatelle with ham and cream is a rich wholesome dish that could be the whole meal for the variety of the ingredients. Very simple and quick to prepare.


Ingredients for 4 people:

  • 1 pound tagliatelle
  • 4 ounces ham cut in strips
  • 1 cup cream
  • 1/2 cup grated parmigiano
  • 1/2 teaspoon nutmeg
  • 2 yolks of egg
  • salt if necessary
  • coarse black pepper
  • 3 tablespoons fresh chopped parsley



Combine cream, ham, parmigiano, nutmeg, salt in a saucepan and heat slowly.

When mixture hot, remove from heat and mix in yolks briskly.

Add sauce to pasta cooked and drained. Mix well adding black pepper and parsley. Serve at once.


Note: cream mixture should be hot but not reaching boiling. Always reserve some water from pasta in case needed to dilute sauce.
