Tagliatelle prosciutto e pomodoro is a recipe based on a quick and easy tomato sauce with an accent to a vigorous rich taste.


Ingredients for 4 people:

  • 1 pound tagliatelle
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 small onion
  • 1 teaspoon thyme
  •  4 ounces prosciutto
  • 6 San Marzano tomatoes in purée
  • 10 leaves fresh basil
  • salt and pepper
  • !/2 cup grated parmigiano



In a large deep pan, warm up butter and oil and cook onion on moderate heat until soft. Stir in thyme and prosciutto and cook for another minute.

Add tomato purée salt, pepper and some water if mixture too dense. Cook for about 10 minutes until sauce thickens.

At medium heat pour into pan tagliatelle, add basil shredded by hand and parmigiano.  Mix well with sauce. Turn heat off and serve at once.


Note: you could also use a simple tomato sauce. Just add prosciutto and thyme before tomatoes.
