Spaghetti with saffron is a dish with the strong yet delicate character of saffron. You’ll appreciate its addition when you are looking for a fuller, vibrant aromatic flavor to your plate of pasta.
Saffron can be generally found in a good supermarket in small sachets. It can be added to almost any pasta dishes. It can also be used in a creamy pasta recipe.
Ingredients for 4 people:
- 1 pound spaghetti
- 4 tablespoons butter
- 1 shallot finely chopped
- 8 ounces thin asparagus tips
- 1 ounce brandy
- 2 sachets saffron
- 1/2 cup parmesan
Sauce will take less than 10 minutes. So start as soon as you throw the spaghetti in the water.
Use a large pan where you’ll flavor the spaghetti. Warm up butter and at low heat cook shallot until soft, about 2 minutes, then add asparagus.
Add salt, some water to the pan for the asparagus to cook better.
When asparagus are done and water evaporated (about 3 minutes), add brandy. Stir and let go a few seconds.
Mix saffron in about 3 ounces water from the pasta and add to the pan with the asparagus. Stir and mix well.
Toss pasta into the pan. Mix well adding parmigiano. Add more water saved from the pasta, if needed. Turn heat off and serve.
Note: You can use olive oil for a healthier side. Use wine instead of brandy, or skip.
