Spaghetti alla abruzzese rustic satisfying dish of pastoral mountainous Abruzzo reminder of neighboring region Lazio recipes
Ingredients for 4 people:
- 1 pound spaghetti
- 4 tablespoons olive oil
- 4 onions chopped finely
- 3 garlic cloves finely chopped
- 10 slices of bacon cut into pieces
- 2 ounces grated pecorino
- 2 ounces grated parmesan
- 2-3 tablespoons fresh parsley chopped
- salt and pepper
Put in a large pan bacon, onions, garlic and cook at moderate heat until onions of a golden color, about 10 minutes. Add salt and pepper.
Pour pasta cooked and drained to the pan and mix well at moderate heat to flavor, about 1 minute or more.
Turn heat off and add olive oil, cheeses and parsley. Mix well and serve.
Note:: no need for oil in the pan to cook as bacon will release its fat. Salt probably not needed. Pasta time before al dente as it’ll continue cooking in the pan with sauce.
