Spaghetti al pomodoro e basilico as from the name is a recipe with only two ingredients, besides pasta. Simple and delicious. It’s a reminder that a dish need not to be complicated to be tasty and satisfying. Of course ingredients have to be the best and fresh.

 

Total Time: 20 minutes

Ingredients for 4 people:

  •  1 pound spaghetti
  • 4 tablespoons olive oil
  •  2 cloves of garlic sliced or chopped
  • 8 San Marzano tomatoes pulp chopped
  • Hot pepper (optional)
  • Basil at will

 

Directions:

Start by throwing spaghetti in the water to boil as sauce pomodoro and basilico will take less than 5 minutes.

In a pan, where you’ll toss cooked spaghetti, warm up oil and at moderate heat brown lightly garlic. Pay attention, it’ll take around one minute or less.

When garlic getting to a nutty color, add tomatoes and some hot pepper if desired.  After 1 minute add some basil leaves shredded by hand. Let go for another minute or so.

At this time, spaghetti should be about done. Drain 1 minute or two before al dente, as they finish cooking with the sauce. Pour them into pan with sauce with heat at low. Mix for about 1 minute to flavor. Serve decorating with some basil leaves. Parmesan if you like.
