Shrimp pasta with mushrooms a recipe with a perfect match between products of the sea and earth.
You could use calamari or clams too and even a combination.
Ingredients for 4 people:
- 1 pound spaghetti
- 1/2 cup olive oil
- 3 shallots (2 ounces) chopped
- 6 ounces mushrooms sliced
- 3/4 pound medium shrimp
- 1/2 cup white wine
- hot pepper to liking
- 3 tablespoons chopped fresh parsley
Warm up oil in a large pan at medium heat and put shallots. A couple of minutes later add mushrooms. Cook for about 5 minutes at lively heat. Then lower heat and add shrimp.
After a minute, add wine and let evaporate most of it, about 2 minutes. Add salt and hot pepper.
Toss cooked spaghetti into pan. Add parsley and mix well for flavors to combine. Turn heat off and serve.
Note: fresh porcini mushrooms would be best. You could add tomatoes after wine for a different twist. Don’t forget that pasta will cook an extra minute while you mix with condiment. Reserve as always water from pasta if condiment too dry. You could even add some raw olive oil at time of mixing.
