Shrimp linguine prosciutto cream and more is a good blend of well-balanced ingredients to obtain a rich and tasty yet delicate dish.


Ingredients for 4 people:

  • 1 pound linguine
  • 1/2 cup olive oil
  • 1 clove garlic
  • 3/4 pound medium shrimp
  • 2 ounces prosciutto chopped
  • 1/2 cup dry white wine
  • 2 San Marzano tomatoes to purée (1/2 cup)
  • 1 teaspoon hot pepper flakes
  • 1/2 cup cream
  • salt



In a deep pan or wok, large enough to hold the pasta later, put oil, lightly brown garlic, then discard it.

On medium heat, add shrimp, then prosciutto. Stir and cook for about 1 minute then add wine.

Stir again and let go for about another minute for wine to evaporated a little, then add tomato purée hot pepper and salt. Cook for another minute or so.

Last, on low heat, stir in cream and mix well to heat. Pour linguine into sauce. Mix well, turn heat off and serve.


Note: after garlic has flavored the oil and discarded, it takes less than 5 minutes for the preparation of the sauce. 20 minutes total time includes the time to cook pasta.

You could even skip. You can use hot pepper in powder or crushed hot pepper. Don’t even think to add grated cheese. Its flavor will overwhelm the delicate dish. For this reason never ever cheese with seafood in classic Italian cooking. I know it’s difficult to believe with so many recipes advertising the contrary. In Italy don’t dare asking.
