Salmon and spinach fettuccine a wonderful combination for the nourishment properties of the ingredients and the pleasant contrast of flavors.
Spinach are a good source of vitamins and minerals with antioxidant values, calories insignificant.
This recipe will surprise you as at every bite it gives the impression of a light dish considering the presence of the cream too.
Ingredients for 4 people:
- 3/4 pound fettuccine
- 6 tablespoons butter
- 12 ounces fresh salmon
- 12 ounces fresh spinach
- 1 ounce lemon juice
- 1 cup cream
- salt and pepper
Sauté salmon with some of the butter, grill or poach, then divide into big chunks. Set aside.
Melt butter in a large pan or wok and on medium heat sauté spinach. Add lemon juice and stir a few seconds to blend flavor.
At low heat add cream, then the chunks of salmon, salt, pepper. Stir and heat thoroughly.
Toss fettuccine into pan with salmon and spinach. Mix well. Add some water from the pasta if necessary. Turn off heat and serve.
Note: no need for expensive salmon cuts for this dish.
If not able to fit all spinach, in the pan, sauté in two batches. When cooked, they will reduce to very little volume. Spinach will cook fast, about 2 minutes.
Other combination you could make is adding some tomatoes for color and taste. Or color a clove or two of garlic in the butter and then remove it before adding spinach. Maybe some onions or shallots too?
