Rigatoni alla Ricotta typical roman dish is a delicate pleasant and sweet departure from the usual pasta and good as part of an informal meal with friends.

 

Ingredients for 4 people:

  • 1 pound rigatoni
  • 2 ounces unsalted soft butter
  • 12 ounces ricotta
  • 2 tablespoons sugar
  • 1 teaspoon powder cinnamon

 

Directions:

In a large bowl, combine butter, ricotta, sugar, and cinnamon to reach a creamy mixture

Toss rigatoni cooked and drained into bowl and mix quickly. For a creamier dish, if needed, add some water from the pasta, mix again and serve at once..

 

Note: warm up bowl before mixing ingredients, so pasta won’t cool too much at serving. Cook pasta as usual adding salt when water boils. The fresher the ricotta, the better.
