Pesto pasta salad recipe can be as good and welcome in the summer weather. The abundance of fresh basil can certainly be a stimulant idea to try this dish as a cold pasta salad.
Ingredients for 4 people:
- 1 pound fusilli
- 3/4 cup pesto
- 2 tablespoons pine nuts chopped coarse
- 6 ounces tomato cut in small cubes
Cook and drain fusilli reserving a cup of water. Cool pasta and put in a large bowl.
Dissolve the thick pesto in 1/2 cup of water saved and cooled. Add to the cooled pasta and mix well. Add more water if necessary for a smooth combination.
Sprinkle pine nuts and add tomatoes for decoration.
