Penne with vodka and salmon a stimulating twist to a salmon pasta dish, simple and easy in the preparation.



  • 1 pound penne
  • 4 tablespoons butter
  • 2 shallots finely chopped
  • 4 ounces smoked salmon cut in strips
  • 2 ounces vodka
  • 4 San Marzano tomatoes pulp purée
  • 1 tespoon hot pepper flakes
  • 3 tablespoons fresh parsley chopped
  • 4 ounces cream
  • salt



In a large and deep pan warm up butter on low heat and cook shallots until soft. Stir in salmon and heat for a few seconds. Add vodka and let evaporate, about 1 minute.

Add tomatoes hot pepper and salt and let simmer about 5 minutes. Then stir in cream and heat for a few seconds.

Pour cooked drained penne into pan with sauce. Mix well adding parsley. Turn heat off and serve.


Note: always add water to tomatoes, if necessary, so mixture doesn’t dry up, but sauce has to be of dense consistency. Always use water reserved from pasta.
