Penne prosciutto panna pomodoro is a rich combination of pasta ham, tomato and cream with another complementary ingredients. The 4 P’s make it easier to remember.


Ingredients for 4 people:

  • 1 pound penne
  • 1 teaspoon olive oil
  • 3 tablespoons butter
  • 1/2 onion
  • 2 ounces cooked ham in cubes or strips
  • 1 or 2 ounces of vodka
  • 6 San Marzano tomatoes  pulp chopped
  • salt and pepper
  • 2 ounces cream
  • nutmeg
  • 1/2 cup grated parmigiano



In a large deep pan, on moderate heat, put oil butter and cook onion until soft. Add ham and brown lightly, about 1 minute.

Pour in vodka, stir for about 20 seconds and add tomatoes, salt and pepper. Let simmer for about 10 minutes or until mixture thickens.

Add cream and nutmeg. Stir to heat for half a minute or so, then pour into pan penne. Mix well adding parmigiano. Turn off heat and serve.


Note: try to synchronize in the way that pasta and sauce are ready at about the same time. Sauces with cream don’t do well when re-heated. As always, use can if fresh tomatoes not available.
