Penne prosciutto e ricotta a simple recipe from pastoral Abruzzo with the ingredients at hand typical of the land.
Ingredients for 4 people:
1 pound penne
6 ounces ricotta.
4 ounce prosciutto in cubes or strips
10 basil leaves
When pasta is about done, put in a large pan, where you’ll finish the pasta, the ricotta and dilute it with 2 ounces of water from the pasta. ,
Have the pan warm at low heat and add prosciutto.
Drain the pasta and toss it into the pan. Tear in basil leaves and mix all well adding some pepper and some more water from the pasta if necessary. Turn heat off and serve at once. No cheese. Salt may not be necessary.
