Penne prosciutto e piselli is a dish simple in preparation, rich and tasty, a good combination of flavors. It could be a meal by itself for the diversity and the balance of the ingredients.

 

Ingredients for 4 people:

  • 1 pound penne
  • 4 tablespons butter
  • 4 tablespoon oil
  • 1 small onion finely chopped
  • 2 cups frozen peas
  • 1/2 cup broth
  • 6 ounces cooked ham cut in thick strips
  • 1/2 cup grated parmesan
  • 3/4 cup cream
  • Pinch of nutmeg
  • salt and pepper

 

Directions:

Put oil in a pan on low heat. Add onion and cook about 5 minutes. Add peas, stir a bit and add broth. Stir, cover pan and let cook peas, about 10 minutes.

In a deep pan or wok, large enough to accommodate the pasta later, melt butter and brown ham lightly, about 1 minute. Add onion and peas to the ham and mix.

Last, add cream with nutmeg, salt and pepper. Mix well and let heat the mixture. Stir in grated parmesan and add the cooked penne to the pan. Mix well, turn heat off and serve.

 

Note: apart fresh from the garden, frozen peas are better than canned peas. If you use canned peas, they are generally already cooked, so you can add straight to the ham.

If you prefer you can cut ham in small cubes. You can use water instead of broth. Also, always reserve at least half cup of water from the pasta, in case mixture dries up. Total time of preparation for the sauce about 15 minutes. That gives you an idea for synchronizing cooking time with the pasta.
