Penne Pollo e Peperoni can be the whole meal especially indicated for a quick lunch for the rich nourishing assortment of the ingredients.

 

Ingredients for 4 people:

  • 3/4 pound penne or similar pasta
  • 4 ounces olive oil
  • 1 chicken breast cut in small cubes
  • 1/2 onion chopped
  • 1 red pepper cut in thin strips
  • 1 yellow pepper cut in thin strip
  • 4 San Marzano tomatoes chopped
  • salt
  • pepper

 

Directions:

In a large pan where you’ll finish pasta, put  1 ounce oil and brown chicken at lively heat, about 5 minutes. Then set aside.

Add the rest of the oil to the pan, and cook onions and peppers until soft, about 10 minutes.

Add tomatoes with their juice, a little water if needed, the chicken you set aside, salt and pepper. Let go for 10 minutes more at low heat.

At medium heat toss cooked pasta into pan with sauce. Mix well. Turn off heat and serve

 

Note: you could skip tomatoes. For more nourishment and flavor you could add bacon or sausage.
