Total Time: 20 minutes

Pastasciutta alla fornaia from Toscana (Tuscany) is dressed with a Tuscan pesto made with walnuts. Prepare with a mortar, or use a blender or food processor.

 

Ingredients good for 4 – 6 people:

  • 2 cups basil leaves packed
  • 1 cup  shelled walnuts
  • 2 garlic cloves
  • 1/2 cup pecorino sardo or romano
  • 1/2 cup extra virgin olive oil
  • 1/2 teaspoon coarse sea salt

 

Directions:

Same as for pesto pasta recipe; difference is in the walnuts.

 

Note: Walnuts in shells will be more flavorful. Generally used spaghetti. Or use other kind of long pasta.
