Preparation Time: 20 minutes
Pasta salad puttanesca style in a cold pasta salad is good and appreciated as much as the hot counterpart. Hot red pepper is optional.
Ingredients for 4 people:
- 8 ounces farfalle
- 6 ounces tomatoes chopped
- 6 ounces mozzarella cut in small cubes
- 6 anchovies filets chopped finely
- 2 cloves of garlic finely chopped
- 4 tablespoons of black pitted olives sliced
- 1 tablespoon capers
- 3 tablespoons fresh parsley chopped
- 1/2 cup olive oil
- salt and pepper
Put all ingredients in a large bowl except pasta.
Add cooked cooled pasta. Mix well. Let it rest before serving for flavors to blend.
