Orecchiette alla Pugliese a recipe from simple summer ingredients easy to prepare and tasty.
Ingredients for 4 people:
- 1 pound orecchiette
- 4 tablespoons olive oil
- 2 yellow peppers cut in thin strips
- 1 and 1/’2 cup tomato sauce
- hot red pepper to liking
- 10 basil leaves
- 1/2 cup pecorino
Put oil in a large pan and fry the peppers until soft about 10 minutes.
Add tomato sauce, hot pepper and cook five minutes more. Check for salt.
Toss cooked drained orecchiette into pan. Mix well adding hot pepper, basil torn by hand and pecorino. Turn heat off and serve at once.
Note: you can use also red peppers and a mix. Avoid green pepper as they are not as sweet. use a tomato sauce like in spaghetti alla carrettiera. Hot red pepper easy to use the ground type. It mixes better.
