Maccheroni rustici, as from the name, this is a rustic and tasty dish made with ordinary ingredients, good to satisfy a most demanding appetite

 

Ingredients for 4 people:

  • 1 pound maccheroni (tubular pasta)
  • 3 tablespoons olive oil
  • 1/2 onion chopped
  • 4 ounces sliced mushrooms
  • 4 ounces sausage crumbled
  • 4 ounces white wine
  • 3 tablespoons fresh chopped parsley
  • 1/2 cup pecorino romano
  • salt and pepper

 

Directions:

Put oil in a large deep pan on moderate heat. Add onion and cook until soft, about 5 minutes. Add mushrooms and cook five minute more at lively heat.

Then mix in crumbled sausage and cook about 10 minutes more at lower heat. Add salt and pepper, some of the parsley and wine and let evaporate a little. At medium heat toss pasta. Mix well adding pecorino and the rest of the parsley and some water from pasta if needed. Turn heat off and serve.

 

Note: for the red sauce aficionados, just add tomatoes. You could use  some hot pepper flakes. Not necessary if it’s a hot sausage..
