Maccheroni alla Molisana from Molise region, is a super quick and tasty pasta dish. Pasta can be ready before the sauce. Ingredients are scarce and simple and typical of Italy central regions.
Ingredients for 4 people:
- 1 pound maccheroni (short tubular pasta)
- 2 tablespoons olive oil
- 1 small onion chopped fine
- 1 clove of garlic chopped fine
- 4 ounces bacon chopped
- 10 basil leaves
- 1/2 cup pecorino
- salt if needed
In a large pan on moderate heat put oil onion and cook until getting soft, about 5 minutes .
Add garlic and bacon and cook another 5 minutes. Add pepper and salt if needed.
At medium heat pour cooked drained pasta into pan, tearing by hand basil. Mix well adding pecorino. Turn off heat and serve at once.
Note: you could put all the ingredients together in the pan with the oil. I prefer to add garlic minutes after the onion as it’s more easily burnt. If sauce too dense, you can add some water from the pasta or a little raw oil at the time of dishing out You can substitute black pepper with cayenne pepper.
