Linguine with shrimp corrette interesting simple preparation with bare essential ingredients assured to please any shrimp pasta lover.

 

Ingredients for 4 people:

  • 1 pound linguine
  • 4 tablespoons olive oil
  • 2 cloves of garlic
  • 4 tomatoes chopped
  • Hot pepper flakes
  • 3/4 pound medium shrimp cleaned
  • 2 ounces brandy
  • 2-3 tablespoons fresh parsley chopped
  • salt

 

Directions:

In a deep large pan on low heat, put oil and brown lightly garlic cloves, then discard them.

Add tomatoes, salt and pepper flakes and simmer for about 5 minutes.

Raise the heat a bit, add shrimp and cook for about 3 minutes.

With heat at low add brandy. A few seconds later pour cooked linguine into the pan, add parsley and mix well. Turn heat off and serve.

 

Note: chop the garlic and leave it in if you like.
