Fettuccine with Fresh Salmon a rich intriguing taste pasta recipe quick and easy to prepare with simple ingredients.

 

Ingredients for 4 people:

  • 3/4 pound fettuccine
  • 3 tablespoons olive oil
  • 2 cloves of garlic
  • 1 sprig rosemary
  • 1 cayenne pepper or flakes
  • 12 ounces fresh salmon
  • 4 ounces dry white wine
  • 4 San Marzano tomatoes pulp chopped
  • salt

 

Directions:

In a large pan on low heat put oil garlic rosemary and cayenne pepper. Remove garlic when golden, rosemary and cayenne pepper.

Add salmon and cook both sides, about 10 minutes. Remove skin, in case and break in small pieces. Add wine and let evaporate, 2-3 minutes.

Add tomatoes, some water, if necessary and cook about 10 minutes more at low heat.

Toss cooked and drained pasta into sauce at low heat. Stir to flavor, then turn heat off and serve.

 

Note: you could skip the addition of tomatoes. In that case, make sure salmon is done. Remember to drain pasta about a minute before al dente, as it will keep cooking while mixing with sauce.
